Hi all. Thanks for showing interest in the fitfullfoodie site. I assume that since you are here, you want to know a little bit more about me. Well, there’s lot’s to share, but I’ll focus mainly on my GI issues and what has driven me to create this site.
So unfortunately this goes back 10+ years. Don’t worry, I won’t be giving you the play by play of every day since then, I’ll try to keep it brief. I said try. I was very active at that point in my life. I was enrolled in martial arts (and loved it) 4 nights a week and tried to hit the gym 2-3 nights per week (I’ve been a gym rat for as long as I can remember). Aside from overworking my body and not getting enough rest, I was in great shape.
Then it hit. It crept in slowly as it usually does, but acid reflux started. I ignored it for some time, just shrugged it off as a sign of weakness (silly I know). Then the symptoms started getting worse. This mainly happened at night.
Eventually, I went to see my doctor and he labeled me with GERD (Gastroesophageal Reflux Disease). Welcome the little pink/blue pill for a few months. Things got better for a while! But then they got worse.
Now I am not going to misguide you into thinking I lead the perfect lifestyle. I didn’t. I was eating a Paleo-ish diet back then which was good, but I partied like it was 1999. OK, not Nicolas Cage in Leaving Las Vegas kind of partying, but each weekend had a night or two of enjoyment with an evening event strewn about once in a while during the week.
The GERD soon came back. Back on the pills again. Miracle. Life is good again. Back to my old Lifestyle. Oops, here comes the Big G again. Now back on the pills for good. OK fine, I don’t like taking pills but I don’t want to give up my lifestyle either, so down the hatch with a pill every day. That lasted about 2 years. Buy a house, pile on some stress with renovations, and the Big G is back again. This time I was taking the pills and had been. What now? OK, shelf the booze for a few months and see what happens. Go for some tests, all looks good, off the booze, feeling good. All better after 6 months. Well, let’s dive right back in where we left off, shall we! Within 8 months I was back to where I was with the pain and the GERD. Multiple tests and scopes still showed nothing. Healthy as a horse. But I wasn’t.
On to the Naturopath. By this time my weight was all over the place. I was swinging up and down 10 pounds in a matter of a couple of weeks and often 6 pounds within a week. Something just isn’t right. Let’s test for food intolerances…. Guess what? Got’ em.
I’m intolerant to gluten, dairy, pistachios, hazelnuts, oranges, plums, egg whites, corn, and brewers yeast. Well there goes all of my favorite foods. No tacos, no beer, no eggs, no pizza, no cheese, no beer. This was a real low point for me personally. I know there are many people out there with far worse situations, and I feel for them, I really do, but I was being a little selfish and focusing on my situation. I am a foodie that can’t eat food. How is this even fair or possible?
After stewing on it for a couple of months, I finally broke the haze of my depression and decided to prove to myself and to others that being on a restricted diet doesn’t have to be boring. I can have all of the flavor and beauty of a normally prepared dish with the ingredients that I can use. Fresh, whole ingredients. The idea and site for fitfullfoodie was born. I am here to dedicate my time and effort to provide you and myself with the best dishes I can make with the ingredients that I have.
