When you first hear sweet potato brownies, your eye starts to twitch, your brain starts to misfire, and your nose probably starts itching. It’s not something you really see together in a sentence, let alone a bowl. It’s like taking Thanksgiving desert, and smearing on a layer of sweet potatoes from dinner. Doesn’t sound right, does it? Well hold on there folks, cuz I can tell ya that if this is not right, you are going to wish you were wrong more often!

So why did I “kick up” something so good to begin with?? Well I always like a snack after coming home from the gym and Dr. Google says that protein is best taken within 30 minutes of a workout so this seemed like a great option. Keep in mind that the protein will thicken the batter a lot, and will dry it out more. If you want to keep it really moist, you can add more sweet potato. Personally, I don’t mind it a little more “dry” (it’s not actually dry, it’s just not going to leave a wet stain on a paper towel). For this recipe I used Vega’s Clean Protein. It is my fav when I am just looking for straight protein in my recipes. It’s not very gritty in my opinion, fits with my dietary restrictions and packs a good protein punch.
I’ve been so overwhelmed with talking about sweet potato and protein, I haven’t even mentioned how simple this recipe is. FIVE ingredients. That’s it!! If you choose to omit the protein powder, you’re down to four and 20 mins of baking. Basically you could be eating dessert before dinner is ready. I don’t recommend that, though I may have done it. Quick and simple. That’s how we roll sometimes here at @fitfullfoodie. OK OK, you have to bake the potatoes the day before but that was yesterday and technically doesn’t count as a part of this cook time. I mean how do I know you didn’t buy pre-baked sweet potatoes (does that even exist)??
With regards to the nut butter, use your fav. I use almond butter as I eat that stuff with a spoon out of the jar. Net to try is cashew butter. I am sure peanut butter would be amazing as well but now you are falling on the other side of the paleo fence, but vegan friends are fine!! Whatever you use, don’t be shy. Share your thoughts and results.
I use a local chocolatier brand of cocoa powder. Use your fav or whatever you have available to you. Dutch cocoa powder seems to be very popular and has worked well for me in the past.

Kicked Up Kelley’s Vegan Sweet Potato Brownies
- 1 cup Mashed Baked Sweet Potato (cooked and cooled from the night before)
- 1/2 cup nut butter (almond, cashew, etc)
- 1/4 cup cacao powder
- 2 tbsp maple syrup
- 1 scoop Vega Clean Protein powder (optional)
- Preheat oven to 350F.
- Mix all ingredients in a bowl until well combined.
- Spray a baking dish with oil or non-stick spray.
- Scoop batter into the baking dish and spread evenly.
- Bake in the oven for 18-20 minutes.
- Remove and let cool.
- Cut and serve with whipped cream, berries, or your favourite toppings.
