Sweet Potato Hash



  1. Cube the potatoes as described above
  2. Cube the carrots as described above
  3. Chop the onion (or green onion if using) to be smaller than the potatoes
  4. Chop the green pepper to be roughly the size of the potatoes
  5. Chop or grate garlic finely
  6. Grill sausages to the point that they start to brown and firm up (you can skip this step and just slice if you wish)
  7. Remove sausages from the grill and slice into rounds
  8. Heat skillet on med-high heat.
  9. Add oil
  10. Sauté onions and garlic until translucent
  11. Remove onions and garlic from the pan and set aside
  12. Add the pepper and sauté until starting to soften
  13. Remove the pepper from the pan and set aside
  14. Add the potatoes and carrots to the pan and sauté until browning and starting to soften
  15. Add chopped oregano and thyme
  16. Add the broth and cook until broth is almost gone
  17. Add the peppers back into the pan
  18. Add the onions and garlic back into the pan
  19. Add the sausage rounds into the pan
  20. Cook another 5 minute while stirring occasionally
  21. Remove the pan from the heat
  22. Garnish with chopped parsley
